At $9, the salmon fajitas at Mango's Cantina (403 Westheimer, 713-522-8903) are, incredibly, among the most expensive items on a very innovative menu. This tasty entrée begs the question: "Why didn't anyone think of this before?" An ample portion of fresh Chilean salmon is cut into slices, marinated with Southwestern spices, grilled until the outside is crispy and served on a sizzling comal with grilled onions. Not only is the dish delicious, it's also colorful, since the salmon is accompanied by bright yellow rice, tomatoes, lettuce, a killer guacamole, charro beans and tortillas.
